Food – the 4-letter word invokes more than four emotions within us humans. It’s one of the few essentials, along with water and soil, that stand irreplaceable with any object worldwide. Food teaches us a lot about the culture and traditions behind each recipe, narrating to us the stories that have influenced the dish’s existence and in turn, the dish’s impact on the people consuming it.

Chefs are the visionaries who pursue to master the art and craft of cooking for endless hours, producing perfection on each plate. Creating their masterpieces by crafting the perfect amalgamation of spices and food products, they ensure each step and procedure is followed to the dot, with the end goal of satisfying the customer and themselves for their efforts. Fazal Kola is a chef of high repute, having served eye-appeasing and mouth-watering dishes at some of Dubai’s most reputed hotels. Hailing from the picturesque town of Bhatkal in the Northern Coastal region of Karnataka, he pursued and graduated with a degree in hotel management in Bangalore.

Post-graduation, he migrated to Dubai in 1998 and initiated his career with a small yet significant start in The Dubai Intercontinental, where he trained under the executive chef for six months. His dedication to the craft and pursuit of perfection promoted him to be the executive sous chef, where he’d supervise the dishes before the executive chef approved and finalized them. His dissatisfaction with the job’s activities and the burden of regularly executing them prompted him to join the pastry section, where he worked harder, perfecting each sweet and cake.

After providing his excellent services to the guests of The Dubai Intercontinental for over a decade, Fazal Kola returned to Bhatkal in 2014. His passion also travelled with him and pushed towards the eventual establishment of Brownie Cafe that year. It was initially operated in a tiny kitchen, and with his hard work and dedication to providing perfection, he soon began receiving numerous orders on numerous occasions. This provided him with the financial support he needed to open another establishment in Bhatkal.

The COVID-19 Pandemic was a catastrophe that impacted every individual, and Fazal Kola was no exception. He suffered further when water entered his cafe, wreaking havoc on most of the essential machinery and stuff, and his pockets too. He stopped conducting business for 3-4 months, and after gathering himself together, he initiated another run with the same name – Brownie Cafe.

Brownie Cafe offers a range of delicious food under a budget more reasonable than most established food outlets. A range of mouth-smacking starters from French fries and chicken nuggets to the uniquely structured ‘thread chicken’ shall set the mood for the ‘Big Bits’ consisting of a variety of burgers, pizzas, and rolls, with veg and non-veg toppings like paneer, mushroom, prawns, and chicken. The first bite would melt the senses of the taster, the second would merge the senses, and the third bite...well, takes the taster to heaven.

The pastry section is however equally, if not more commendable than the savory section. The brownie section consists of Chocolate and Red Velvet brownies and sizzlers, with the brownies containing walnuts, an intriguing item that only polishes the whole item’s taste. Thick milkshakes, mojitos, and cakes are also offered in numerous flavours and toppings. Brownie Cafe also offers combos, which makes selecting the perfect item a hard thing to do for the customer, as every item is cooked to perfection.

Fazal Kola has since been successful, with Brownie Cafe receiving regular orders offline as well as online via WhatsApp. He has plans to expand Brownie Cafe to other parts of Karnataka and Mumbai, the financial capital of Maharashtra once it fully recovers from the COVID-19 impact. He credits his family as they have assisted him in the kitchen, and his brother’s editing skills are giving Brownie Cafe an online push.
